Pittsburgh Salads {recipe}

I was just in my hometown of Pittsburgh, PA for a visit. One of our city's greatest culinary contributions are Pittsburgh Salads which are LOADED with toppings and french fries!

These salads are a full meal and include veggies, meat, cheese, garlic bread, fries, and anything else you'd like to add. The finishing touch comes from buffalo chicken, grilled steak or shrimp, or even sriracha tofu!

Pittsburgh Salads {recipe}

Ingredients:

Veggies:
  • Lettuce
  • Shredded carrots
  • Sliced cucumbers
  • Sauteed mushrooms

Toppings:
  • French fries
  • Hard boiled eggs
  • Garlic bread
  • Cheese

Choose from:
  • Sriracha tofu (from Trader Joe's. Most stores carry other marinated tofu varieties.)
  • Buffalo chicken
  • Grilled chicken, steak, or shrimp

I love Trader Joe's marinated sriracha tofu. Most stores carry different marinated tofu varieties like teriyaki or savory.
Directions:

Start with the eggs. Hard boil & peel the eggs then refrigerate them until it's time to eat.

Prep the veggies. Wash lettuce, shred carrots, slice cucumbers (more info on my fav mandolin here), and cut mushrooms.

Cook the hot items last. Heat fries for 20 - 30 mins in the oven. Sautee mushrooms on the stovetop. Grill or cook your meat/shrimp/tofu. (I tossed the sriracha tofu in the pan after the mushrooms to heat and crisp it.) Toss the garlic bread in the oven for 5 -7 mins.

Build the salad. Layer the veggies, the hot items, & cheese. Don't forget the garlic bread and eggs, then serve with ranch, blue cheese, or your favorite dressing.
