This Tater Tot & Egg Bake is just the breakfast dish I've been looking for. It's large enough to feed a group and really simple to make. It's meatless but would be great with a side of crispy bacon. I found this recipe in Bon Appetit, my favorite food magazine. The instructions were complicated and cumbersome. Watching the eggs bake on the stove top - ain't nobody got time for that. Flipping the whole thing over onto a cutting board - I hate that shit. I swapped a few ingredients to my liking and changed the cooking from the stovetop to the oven.
