Cool Watermelon and Cucumber Salad {Recipe} + How to Cut a Watermelon

Summertime is my favorite season of the year. I love the warm weather, the long days, and the cool and refreshing foods. Cold ice cream, iced teas and coffees, and ripe fresh fruits at their peak of flavor all speak to my heart and taste buds.

This Cool Watermelon and Cucumber Salad is a unique combination of fresh flavors. Fruit, vegetable, cheese, and fresh mint marry for a refreshing side dish. Make it for yourself or bring a big bowl to share with friends at your next summer BBQ. This salad keeps very well in the fridge and tastes even better after a day or two.

Cool Watermelon and Cucumber Salad, for one

Cool Watermelon and Cucumber Salad

Serves 6 - 8

Ingredients:

1 seedless watermelon, cut into cubes
1 cucumber, sliced into bite sized pieces
1/4 of a red onion
1 lime

4 Tablespoons of extra virgin olive oil (EVOO)
2 Tablespoons of red wine vinegar
4 Tablespoons of crumbled Feta cheese

1/4 cup of fresh mint leaves
Salt
Pepper


Directions:
Begin by preparing the watermelon [see below for how to cut a watermelon] and cucumber. Toss both cucumber slices and watermelon cubes into a large bowl.

Chop the red onion and place it into a small bowl. Juice the lime over the onion. Add the EVOO and red wine vinegar, then stir the contents of the small bowl to combine the liquids and break up the onions. Pour over the watermelon and cucumber. Add salt to taste then stir gently to combine. 

Finally, chop the mint leaves and top the salad with Feta cheese, mint, and pepper.

How to Cut a Watermelon

A few summers ago I discovered a way to cut a watermelon that absolutely changed the task from a huge and mildly dangerous hassle to a breeze. Stop fighting with rolling wedges of watermelon and give this a try.
  1. With a very sharp knife slice the top and bottom ends of watermelon off. This will create a flat base and prevent the melon from rolling around.
  2. Carefully slice down the length of the watermelon to remove the green and white parts of the rind, leaving only the juicy fruit. Repeat all the way around.
  3. Flip it over to neatly remove any remaining green and white parts from the bottom, then you're free to easily slice the melon into cubes.
Between this Watermelon and Cucumber salad + my favorite Summer Cous Cous Salad with Grilled Halloumi Cheese, I may never use the oven for the rest of the summer!
