Breakfast is a struggle for me. I want coffee followed by more coffee. Food is good but I want a huge glass of water, maybe a smoothie and yes, more coffee. I’ll often take a banana to go and I can always eat peanut butter (or almond butter, cashew butter, etc).
This recipe idea came to me when a (hot) cappuccino I'd been drinking was left alone and turned cold. I threw it into the blender with these other breakfast items and now I give you the Daybreak Smoothie. Coffee is included and encouraged, although not necessary! Daybreak Smoothie {Recipe}
A Figs and Flights Original Recipe
Makes 1 smoothie Ingredients: Half of a banana 3 heaping spoonfuls of vanilla yogurt 1 heaping spoonful of almond butter Espresso & soy milk (roughly one shot of espresso and 1-2 oz soy milk) 1 teaspoon of cocoa nibs 6-8 ice cubes Also Needed: A blender A drinking cup Optional but great - A straw that's reusable! Link to my favorites below. #reducereuserecycle Directions: Put all of the ingredients into the blender. Don't forget to add the lid. Be careful, there are sharp things! Blend until smooth. Pour the liquid into the cup and drink it!
I make smoothies all of the time and they're usually just OK. This one was so delicious and had to be written down. The hidden gem that sets this smoothie apart from the others is the addition of the cocoa nibs. They contribute a little bit of chocolate flavor and crunch while avoiding the dreaded need-to-chew in a smoothie. I'm looking at you, frozen coconut.
