Watermelon Cocktails {Recipe}

Maybe you're feeling emotional or overjoyed because you've just sent your kids back to school. Maybe you can't wait to do so next week. Maybe you want to celebrate Thirsty Thursday (today!) or Labor Day Weekend. Maybe you have a watermelon that you don't know what to do with, like I did. Maybe you're reading this and have just decided for no reason at all that you can't live without a watermelon cocktail for another minute!

​No matter the reason you will surely enjoy this cool beverage. It feels so adult-ish to make a cocktail with real fruit, doesn't it?

While I love, love, love this Cool Watermelon and Cucumber Salad I've had it too much lately. There was one watermelon remaining from a Costco two-pack and I didn't know what to do with it. HELLO ANG, mix it with booze!


​Watermelon Cocktails

Serves 10 - 12 drinks

Ingredients:

1 seedless watermelon
2 oz (1/8 of a cup) of agave (or another sweeter like sugar, Splenda, etc.)
16 - 20 fresh basil leaves
750 ml of Tequila blanco 
1 cup of fresh citrus juice, half lemon and half lime (from about 4 - 6 lemons and 4 - 6 limes)

Also Needed:
A blender - We recently fell in love with the Ninja Mega Kitchen System which includes a blender, food processor, and 2 individual cups with lids for single serve smoothies. Nothing we had before compares at all!
A pitcher for mixing and serving the drinks - This glass one is perfect.
A strainer - I wasn't sure if I'd use my Le Creuset Silicone 1-Quart Colander and I use it all of the time! It was perfect for this recipe to rest on the pitcher and pour directly into.

​Directions:

First remove the watermelon's rind [here's my easy trick for cutting a watermelon] and cut the flesh into pieces that will easily fit into your blender.

Put the watermelon into the blender along with the agave or sweetener. If you've got more watermelon than your blender can handle split it into two smaller batches for blending. Blend until the sweetener and watermelon pieces are both dissolved. Add the basil leaves and blend for just 10 seconds more. 

Allow the watermelon, sweetener, and basil rest in the blender for 15 minutes. Then pour the mixture through a strainer into a pitcher. 

Finally stir the tequila (start with half to 2/3 of the bottle and increase as you see fit) and lemon and lime juices into the watermelon mixture. Chill and/or pour over ice. Garnish with lemons or limes, or not. Enjoy!

Last weekend we shared these cocktails with friends and, before we knew it, the pitcher was empty! We'll have to make them again this weekend.
