Honey-Roasted Peanut Butter Cookies {Recipe}

Cookies are my favorite sweet treat. I love them all, Girl Scout cookies, grocery store cookies, and freshly baked cookies alike. I do not, however, love to bake. 

Over the years I've learned that I CAN bake, I just have to do a few things to prepare.
  • Remember that with baking you must follow all of the rules
  • Read the recipe in its entirety a few times before getting started
  • Measure out 100% of the ingredients before even turning on the oven

A few years ago I was given the Fearless Baker Cookbook (link to buy on Amazon, below) as a gift and it's the very best for uneasy bakers like me. The recipes inside have all been stellar and the tips and instructions listed in the book make it a breeze to bake.

Over the weekend I made a batch of the Honey-Roasted Peanut Butter Cookies. I mustered up my patience and best kitchen tools to make baking a success. I've included Amazon links, below, for my favorite baking must have tools below, as well:

  1. Magnetic nesting measuring spoons - I actually have two sets of these so that I don't have to wash any during my baking prep. 
  2. Silicone nesting/measuring bowls - these are SO useful. I swear that I use them everyday for one thing or another. They are especially perfect for measuring things like peanut butter for this recipe because you can bend and squeeze them to get it all out. 

You must try these cookies! Take a standard peanut butter cookie and add sweet and crunchy honey roasted peanuts to the batter and the top, it's heaven. ​​

Honey-Roasted Peanut Butter Cookies {Recipe}

Recipe from the Fearless Baker Cookbook by Emily Luchetti and Lisa Weiss

Makes about 36 cookies

Ingredients:
2 sticks (16 tablespoons) of unsalted butter
1 cup of granulated sugar
3/4 cup firmly packed light brown sugar
1 cup smooth peanut butter
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 Tablespoon + 1 teaspoon baking powder
1/2 teaspoon salt
2 cups of honey-roasted peanuts (1 cup coarsely chopped for the batter, the other 1 cup as-is for topping the cookies)

Also Needed:
Baking sheets
Parchment paper or Silpats 
Rubber spatula
Small spring-loaded ice cream scoop

Directions:
Preheat the oven to 350 degrees Fahrenheit. Line the baking sheets with parchment or Silpats. 

With a mixer, or by hand, beat the butter, granulated sugar, and brown sugar together until smooth. Scrape down the side of the bowl with the spatula and mix in the peanut butter. Mix in the eggs and vanilla until combined. Add the flour, baking powder, and salt. Mix everything until smooth, scraping down the side of the bowl once or twice. Stir in the chopped half of the peanuts.

​Put 2 racks in the upper and lower thirds of the (preheated) oven. Using the ice cream scoop, arrange 1-tablespoon mounds of dough 2 inches apart on the baking sheets. Press the remaining (whole) peanuts on the cookies.

Bake for 14 minutes, or until the cookies have browned lightly on the edges but still are soft in the middle if you press them lightly with your finger. Although they may seem underdone, don't be tempted to let them bake longer - they'll firm up as they cool and if baked too long they'll be dry. So that the cookies bake evenly you may need to rotate the pans in the oven or switch racks halfway through. 

Let the cookies cool to room temperature.

These cookies are truly the best peanut butter cookies. No need to fuss with making fork-marks on top. The whole, honey-roasted peanuts on top take them to the next level! Crunchy, sweet nuts on top of perfectly baked cookies - yeahhhhh.
