Costco's got seasonal pumpkins and bats ravioli to get you in the Halloween spirit! The price is just $8.99 for two 16 oz packages. The ravioli are filed with ricotta, mozzarella, parmesan and asiago cheeses. They'd be DELICIOUS with a simple butter & parmesan finish or topped with marinara sauce but I wanted to get creative and keep their colors intact for spooky effects. Try the pumpkins and bats with lemon & butter sauce or grab Costco's butternut squash pasta sauce for an autumnal meal. Get your spooky, seasonal, and EASY meal underway throughout October or on Halloween before you dig into the candy! Pumpkins and Bats Ravioli with Lemon & Butter SauceIngredients 1 - 16 oz package of Pumpkins and Bats Ravioli 1 stick of butter, divided in two and cut into small pieces 1 lemon, sliced and seeds removed - here's my favorite mandolin for such a job! Parmesan cheese Salt and pepper Fresh basil leaves Instructions: Start with the lemon butter sauce. In a large/heavy pot or Dutch oven heat half of the butter over medium heat until it's melted. Add the lemon slices and cook until they're softened and the bottom of the pot begins to brown, stirring often and for about 6 minutes. Remove the prettiest lemons for garnishing each plate. Boil the water for the ravioli. The pasta needs to cook for just three minutes. Set aside 2 cups of pasta water before you drain the ravioli, then add the pasta water to the butter sauce. Add the remaining pieces of butter to the sauce one by one, whisking to incorporate each time. The sauce will get creamier as you go. Add the pasta to the sauce and coat completely with sauce before adding parmesan cheese, salt and pepper, and fresh basil. Garnish with the pretty lemons and mangia! The pasta needs to cook for just three minutes, then drain the ravioli. Heat the sauce in a saucepan.
