Brussels sprouts - 2 ways {recipes}

Brussels sprouts have really had a glow up recently. They're not on par with the prom queen popularity of cauliflower but they've come a long way since the squishy gross veggie of my childhood.

Recently I bought a 2 pound bag of Brussels sprouts at Costco. I got creative with them for a hot breakfast and in a cold make-ahead salad. Chose your own Brussels sprout adventure!

Tater Tot & Brussels Sprouts Breakfast Bowls {recipe}

I love a green veggie for breakfast but I can't deal with spinach in every single morning meal. Brussels sprouts are a great option for the "most important meal of the day!"

I paired the little green guys with some frozen tater tots (which were bought with the Tater Tot and Egg Bake in mind) and completed the lovely bowl with two eggs. It was a fantastic idea. 

Topping the hot tots with cheese is important to make sure it reaches melty perfection! The textures are great: the leafy sprouts, starchy tots, and runny egg make a great little combo.

Brussels Sprout Caesar {recipe}

Once I ordered a Brussels sprouts salad at a restaurant and the sprouts were cut into ribbons and still raw. Uhhhmmm no. I don't want uncooked veggies, I'm not a bunny.

I love my Brussels sprouts roasted and crispy. With a little texture, ya' know?

This Brussels sprout Caesar is so easy. It needs just a few ingredients (your favorite Caesar dressing) and it's best when made in advance. The flavor is perfectly balanced with rich Parmigiano Reggiano cheese and a squeeze of fresh lemon.

​The sprouts are great cut as halves or quarters. Keep an eye on them while roasting, though, gently browned comes just a moment or two before burnt!

I preferred the dainty quartered sprouts. Chose halves for a more toothsome bite.
