Cheesy Gnocchi with Squash and Kale is a perfect fall comfort food. This has been in my cold weather recipe rotation for years.
It's filling, cheesy, vegetarian, and easy to make. Buy pre-cut squash to make things simple.

What more can we say or read about Covid-19, staying at home, and how our lives have changed? I've never eaten or cooked at home so much in my entire life. While it's not easy to find chickpeas in grocery stores these days I eventually did. This recipe patiently waited until that lucky day and it was worth the wait! The next time you can get your hands on 30 ounces of chickpeas (also called garbanzo beans) you've got to make these sweet potato & chickpea bowls. For more recipes like this one check out the recipes page. This recipe is perfect! It's got warm and cool ingredients, smooth, soft, and crunchy textures, and it's super nourishing. It requires only ONE cooking step, roasting the seasoned sweet potatoes and chickpeas in the oven, and you're done. These sweet potato & chickpea bowls make a great lunch or an outdoor dinner for a warm day. I found the recipe in Bon Appetit Magazine's March 2020 edition and made a few modifications of my own. Sweet Potato & Chickpea Bowls {Recipe}I've visited California more times than I can count and mastering how to order at In-N-Out Burger has taken me years, especially since I quit eating meat! I'm here to help you prepare for your visit to Cali with this useful post. For more California goodness check out Travel Guides for Long Beach, Palm Springs, Disneyland, and Disney's California Adventure. Last week's post on Long Beach mentions our recent visit to California's prized In-N-Out Burger but let's get a little more specific today, shall we?
In-N-Out has an oddly simplistic menu and learning how to order just right isn't easy! There's a "secret" menu and plenty of tips and tricks that you won't learn in the drive through line so I'm here to help you navigate the West Coast's favorite fast food spot with ease. To make things more complicated during our recent visit our crew was a trio of one meat eater, one vegetarian, and one gluten free eater. We all walked out fat and happy 30 minutes later and that's quite an accomplishment given our self-imposed dietary restrictions. |
